JATIMTIMES - Nasi putih kerap dianggap sebagai sumber karbohidrat yang tinggi kalori dan dapat memicu kenaikan gula darah. Namun, sebuah trik sederhana dalam mengolah nasi disebut-sebut bisa membantu menurunkan jumlah kalori yang diserap tubuh sekaligus mengurangi lonjakan gula darah setelah makan.

Teknik tersebut dilakukan dengan menambahkan satu hingga dua sendok makan minyak kelapa saat memasak nasi. Setelah matang, nasi didinginkan terlebih dahulu lalu disimpan di dalam kulkas selama semalaman.

Nasi tersebut bisa dipanaskan kembali sebelum dikonsumsi. Hal tersebut dibeberkan  ahli teknik pangan Vincent dan ahli gizi Liannya.

Vincent menjelaskan bahwa proses pendinginan setelah penambahan minyak kelapa bisa memicu terbentuknya pati resisten (resistant starch) pada nasi. Pati jenis ini lebih sulit dicerna oleh tubuh sehingga tidak seluruhnya diubah menjadi gula.

“Ketika nasi yang sudah dimasak didinginkan, sebagian pati akan mengalami perubahan struktur dan membentuk pati resisten. Penambahan minyak kelapa dapat membantu proses tersebut sehingga tubuh lebih sulit mencerna pati tersebut menjadi glukosa,” kata Vincent.

Menurut dia, keberadaan pati resisten membuat indeks glikemik nasi menjadi lebih rendah dibandingkan nasi yang langsung dikonsumsi dalam keadaan panas. Karena lebih sulit dicerna, respons kenaikan gula darah setelah makan juga bisa lebih terkendali.

“Selain itu, jumlah kalori yang benar-benar diserap tubuh dari pati tersebut menjadi lebih rendah,” imbuh Vincent.

Meski demikian, Vincent menegaskan bahwa metode ini bukan berarti membuat nasi menjadi makanan rendah kalori secara drastis. Efeknya tetap bergantung pada jumlah nasi yang dikonsumsi dan pola makan secara keseluruhan.

Sementara itu, Lianny menambahkan bahwa cara pengolahan nasi hanyalah salah satu bagian dari upaya menjaga kadar gula darah tetap stabil. Komposisi makanan yang dikonsumsi bersamaan dengan nasi justru memiliki peran yang tidak kalah penting.

“Yang paling penting bukan hanya bagaimana nasinya dimasak, tetapi juga apa yang dimakan bersama nasi tersebut. Kombinasi dengan lauk berprotein dan sayuran dapat membantu memperlambat penyerapan gula sehingga lonjakan gula darah lebih terkontrol,” terang Lianny.

Ia mengimbau masyarakat untuk tetap memperhatikan porsi makan dan memastikan kebutuhan gizi seimbang terpenuhi. “Jangan hanya fokus pada nasinya. Kehadiran protein, serat dari sayuran, dan pola makan yang seimbang merupakan kunci utama untuk menjaga kesehatan metabolik,” jelasnya.

Dengan demikian, trik menyimpan nasi semalaman di kulkas setelah dimasak dengan tambahan minyak kelapa memang dapat membantu meningkatkan kandungan pati resisten. Namun, pihaknya mengingatkan bahwa pola makan secara menyeluruh, termasuk konsumsi lauk bergizi dan sayuran, tetap menjadi faktor utama dalam mengontrol kadar gula darah dan menjaga kesehatan tubuh.
